Muscovado
Muscovado sugar is a lovely purified raw sugar with a high level of moisture and a relatively fine grain. It has a very dark
brown color, and is somewhat sticky due to the high moisture content. Muscovado sugar is made by taking raw sugar cane juice, cooking it, and then allowing the mixture to dry. Whilst not being refined, steps are taken during the cooking process in order to remove some of the contaminants which are present in raw sugar juice. Traditional purifying agents are lime juice and coconut milk. Muscovado sugar is very popular in baking, as it imparts moisture to the goods, as well as a very sweet molasses flavor. Like other forms of consumable raw sugar, Muscovado sugar contains minerals such as iron, calcium, potassium and magnesium.
